Green Bean Caprese Salad
Ingredients
-green beans -cherry or grape tomatoes -olive oil -good quality balsamic vinegar -fresh basil -fresh lemon juice -salt & pepper Directions
-Cut the ends off the green beans, and wash. Set out a large bowl of ice water. Blanche green beans by boiling in a pot of water for 3-5 minutes (beans should be bright green) and then immediately removing & placing in bowl of ice water. -Once beans are sufficiently chilled, drain from water and place into a large mixing bowl. Cut tomatoes in half and season with salt & pepper and place into bowl. Julienne the basil by stacking the leaves on top of each other, rolling into a cylinder, and slicing vertically to create long, thin, strips. Add basil to the bowl. -Add olive oil, balsamic vinegar (in a ratio of 2:1), a couple squeezes fresh lemon juice, and more salt & pepper. |
