Nut & Raisin Kale Salad
Ingredients
-2 bunches of kale -3 TBS extra virgin olive oil -nuts: pine nuts, chopped walnuts, or pistachios work well here. Suggestion: if you are using pine nuts, saute them in a pan on the stove for a few minutes until they are golden brown for added flavor. -raisins -a couple garlic cloves, crushed -juice of 1/2 lemon -fresh fruit like blueberries or strawberries (optional) Directions
-Wash and dry kale. Cut or tear into bite-sized pieces, removing the biggest parts of the stems as they are tough to chew -Place kale in a large mixing bowl and pour in olive oil, lemon juice, and fresh garlic. -Massage the kale until it becomes tender and the dressings are well distributed. Add in raisins and nuts and mix once more. -Top with optional fruit. |
