Peanut Butter Banana "Ice Cream"
This is one of my favorite desserts when I want something filling and healthy and don't have many ingredients on hand. Blending frozen bananas creates a remarkably creamy, ice-cream-like texture that can't get any simpler to prepare, provided you have a strong enough blender. Letting them defrost half-way then refreezing helps the blending process somewhat; and introducing the peanut butter twice- blended in and gently mixed in to create ribbons- makes this dessert oh so rich and satisfying.
Ingredients
-four frozen bananas -five tablespoons peanut butter (separated into 3 and 2 TBS) Equipment -powerful blender (no ice cream machine necessary!) Directions -Leave the frozen bananas out on the counter until they have defrosted halfway (this will make them easier to blend). -Add to a very powerful blender with the first 3 TBS peanut butter. -Blend until combined, and no chunks remain. The texture should be that of soft-serve ice cream. -Pour into a serving bowl (one that fits in your freezer). Mix in the last two TBS peanut butter just enough to create "ribbons" of peanut butter but not enough to combine fully. -Freeze for 2+ hours until hardened, the consistency of hard-scoop ice cream. If freezing for more than 2 hours, every 1-2 hours lightly mix the ice cream so ice crystals don't form. -Enjoy!! |
