Vegan Pumpkin Oatmeal
Ingredients
-14 oz canned pumpkin (1 can) -3 cups unsweetened nut milk (I use almond) -1 cup water -2 cups quick cook oats -1/4 cup raisins -2 tsp. pumpkin pie spice- or equal amount of cinnamon, nutmeg, allspice, cardamom, etc -1/2 tsp. salt Optional toppings: -chopped pecans -dark chocolate chips -maple syrup/brown sugar Directions
-Combine pumpkin purée, nut milk, water, raisins, salt, and spices in a medium saucepan over medium high heat until boiling. -Add in oats. Reduce heat to low and simmer until the oatmeal has thickened, 15 or so minutes. -Serve when desired consistency has been reached and top with pecans, chocolate chips, and sugar/maple syrup if you’d like. |
