Quinoa Sausage Salad
Note: The first time I made this I used Trader Joe's Italian "Sausage-Less Sausage," which at the time I thought tasted really good for a vegan meat replacement. Only later did I find out that this product is not in fact, vegan, as it unfortunately contains eggs. (Can you believe that? Are eggs really necessary there?) I have yet to search for a vegan Italian sausage so for now I will not have any brand recommendations.
Ingredients
-vegan Italian sausage -quinoa -grape/cherry tomatoes -green onions -olive oil -a few dashes of rice vinegar -fresh basil -salt & pepper Directions
-Prepare quinoa according the package directions. -Saute sausage in a pan with some olive oil and salt until browned. -Once quinoa and sausage have cooled, mix with tomatoes, green onions, olive oil, a few dashes of rice vinegar, chopped fresh basil, and more salt & pepper. |
