Roasted Pears with Yogurt
Ingredients
-several pears, how many depends on how many servings you want! -a few tablespoons maple syrup -vegan butter, I like Miyoko's or Milkadamia -granola, preferably ones with some nuts like pepitas or roasted almonds -cinnamon -nutmeg -a teaspoon or so vanilla extract -vegan yogurt, I used Culina Bourbon Vanilla coconut milk yogurt in the photo, and it was totally worth the splurge! Directions
-Preheat oven to 350 degrees. -Cut pears in half lengthwise, and scoop out the seeds/core in the middle with a spoon. For better stability, you can slice a small piece off the bottom of the pear halves. -Mix maple syrup and vanilla extract. Pour into the holes of the pear halves. Add a slice of vegan butter to each pear hole. Sprinkle pears with granola and cinnamon/nutmeg. -Bake in a casserole dish or on a pan with tinfoil until the pears are tender through. I don't have a specific time for you as every pear is different, but perhaps check with a fork after 20-30 minutes. |
I served these with vegan chocolate cake. I won't say the brand because it wasn't that great, but it made for a fancy dessert. |
