Seitan Stir Fry
Ingredients
-one block seitan wheat gluten protein -one bunch greens, I used turnip greens but bok choy or chard could also work, chopped into bite-sized pieces -a couple garlic cloves, crushed -1/2 onion, diced -soy sauce -olive oil -1/2 tsp sesame oil -1/2 tsp MSG/“Accent seasoning” -fresh ginger, grated (optional) -white rice for serving |
Directions
Crumble the seitan into bite-sized pieces. Set aside. Add olive oil and onions to a large saute pan on medium and cook into translucent and browning on the edges. Then add in garlic and saute for another minute or so. Next add in the seitan, a few splashes of soy sauce, the MSG, 1/2 tsp sesame oil, and the grated ginger if using. Cook on medium high until the seitan has begun to brown, about 6-8 minutes. Finally, add the greens (turnip greens, bok choy, chard, or other) and cook for a few more minutes until softened. This process may be expedited by the addition of a few tablespoons water to the pan to help steam them. Serve with white rice!

Variation: Eggplant Bok Choy Seitan Stir Fry
To ingredients, add one large eggplant or several small ones. Cut into large chunks. Also substitute one head bok choy (or several baby bok choys) for the greens. Add in the eggplant and seitan after the garlic and use a bit more olive oil. Saute with the soy sauce, sesame oil, ginger, MSG, and a few tablespoons water until browned and softened. Add chopped bok choy, and cover and cook on low heat until it has wilted. |
