Vegan Tofu Chorizo Scramble
Ingredients
-firm tofu, diced, about 1 cup -Trader Joe's Soy Chorizo or similar product, about 1/2 cup -1 bunch broccolini (or regular broccoli), stems minced and set aside separately -1/2 onion -a few cloves garlic, crushed -handful of grape/cherry tomatoes, sliced in half -1 tsp turmeric -olive oil -garlic & onion powders -MSG (sold in grocery stores as "Accent" Seasoning) -salt & pepper Directions -Saute the onions & olive oil over medium high heat in a large saute pan until translucent, about 5 minutes. Season with salt and pepper. Add garlic and saute for a minute more. Add broccolini stems and a splash more olive oil if needed. Keep cooking on medium until the stems soften. -Add tomatoes, the tops of the broccolini, and MSG and saute for a few more minutes. -Add tofu and chorizo. Using a spatula crumble them into a finer consistency. Add turmeric, garlic and onion powders, and season again with salt & pepper. -Saute for a few more minutes until everything is cooked through. Excellent served with whole wheat toast. |
